Two weeks ago, Hubs approached me with a claim that he wanted to be vegetarian. Anyone who knows me, knows that I was livid with this decision. Thank goodness he was just "feeling me out" and isn't actually going completely meat-free.
Hubs recently cut back on his meat intake and claims that his body feels better than it has in a long time. It is no wonder, with all the chemicals and additives in meat these days!
When we DO buy meat, we try to buy organic and antibiotic free meat and poultry. It can be hard to find in some areas but luckily Wegman's offers a great variety. Don't be fooled by places like Whole Foods and Trader Joe's- make sure to read your labels and don't just assume! Someday we will belong to a CSA and have better control over additives.
I don't eat much meat, but I am not a vegetarian. I have just never loved it the way some people do. Don't get me wrong, I really enjoy our traditional Christmas Prime Rib and even a juicy burger on the grill. But all-in-all, I eat meat only once or twice a week. As a result, I try to stock up on vegetables and grains that offer iron and protein. My personal favorites: KALE & QUINOA.
It is lucky for hubs that I am interested in experimenting with meat-free meal options. Wegman's recently sent a recipe for kale & quinoa cakes that I took into my own hands. I didn't like the pre-packaged seasoning and sauces that their recipe called for. (It was a good effort on their part, they are trying to sell their products)
Another one of my favorite quinoa recipes is corn and quinoa salad. It doesn't even deserve a recipe post of its own. That is how easy it is! In the summer I like to use fresh corn on the cob cooked on the grill because I like the grilled flavor. But it is delicious in the winter with frozen corn too.
Cook 1 cup quinoa in water and set aside to cool. Defrost corn. Dice 1/2 block of cheddar cheese. Combine ingredients in a bowl, add salt, pepper and garlic powder to taste. Add some chives or scallions if you have them. Voila! Easy and delicious. WARNING: This recipe is addictive.
