I am going back to my roots today. It has been a while since my last healthy living post.
Back in December, I was contacted by the folks over at Health Perch about doing a squash post. I jumped at the opportunity to collaborate, as I usually do.
Squash is an unbelievable fruit. Yes, I said fruit. I'll bet almost none of you reading this post knew that squash is a fruit and not a vegetable.
Squash is so versatile. I use it in any dish possible. My 8-month-old daughter is already eating it in a liquefied form. She responds to some varieties better than others. Summer squash is her favorite because it is mild; it takes on the flavor of whatever you are cooking it in. Acorn and butternut squash have not gone over quite as well. I try to hide it by mixing these varieties with apples or bananas.
I have found that those who do not like squash dislike it for its texture rather than its taste. There is such a variety that almost no one I have come across dislikes squash as a whole.
When I think about all the things you can do with squash, I feel a little like Bubba from Forest Gump. Squash pasta, grilled squash, squash pizza, squash bruschetta, roast squash, squash with butter, squash pie... and so it goes.
Back in November, Health Perch put out a really great article about everything squash. I embedded it below because it is just that awesome. Did you know the ideal temperature to store your squash is 50°? I can tell you that my spaghetti squash is currently sitting in my fruit bowl of my 65° home. Oops.
